Ingredients: Barberries. RICE WITH BARBERRIES (ZERESHK POLO): Soak 8 oz barberries for 15 mins, rinse 3 times and pat dry, saute barberries in 4 oz of oil or melted butter for 2 minutes. Add 8 oz of sugar and 1/4 tsp of saffron. Mix with 8 oz of chopped sauted onions. Cook 4 cups of Basmati rice for 8-10 minutes in 8 cups of boiling water, allow grain to be soft and half cooked, drain and mix with above ingredients. Add half a cup of chicken stock or water, cover and simmer on low heat for 30-40 minutes. Season with salt and pepper to taste.
