Sharp/old cheddar for cooking, medium cheese for sandwiches/ shmorges boards.

The milder cheddars are less oily when melted, so I use them for nachos, pizza and Mac&Cheese. The sharper cheeses are used for eating plain or as a complement to fruit, etc.

Mild/ medium is good for chili and for Mexican food where youd expect spices or heat, sharp or Xtra sharp is good for sandwiches, burgers, grilled cheese, etc. Seems to melt into bread without making it soggy. Mild or medium can be used with bread but expect it to make the bread oily in my experience.

If they were free, sure I'd eat their free cheese. Otherwise I'd buy something I like better like muenster or provolone.
