I seem to be extremely sensitive to plastic and metal refillable water bottles/jugs/containers. So far all taste like plastic or metal and soaking them in vinegar or baking soda doesn’t help at all.
Any recommendations from those who are also sensitive?

The only other material option would be glass. As long as you don't drop it, it'd be considered bifl. Many have soft rubber on the outside to help protect from damage.
Use an insulated glass water bottle.
I have this issue with plastic and aluminum, but not stainless steel (as long as I only ever use the vessel for water).
For years, I used a glass water bottle with a silicone protective outer layer for the very reason you described. Starbucks used to sell them.
Also, I do have one stainless steel suggestion. I currently use an Artic water bottle, and it's been great. It doesn't taste like metal at all.

I have a glass bottle with silicone cover. I only use it for water. I have a stainless steel bottle for everything else.

I've had this Lifefactory one and it is great. Glass with a silicone outer. The handle is trash. You can see it is turning white and will fall off. Luckily I bought it for the bottle and not the handle so I don't care. The spout top is perfect for me but they sell other tops that are in the price range of a Porche. Good bottle though.

BKR brand. They’re glass with silicone sleeves. They stay good forever.
Buy a bottle made out of borosilicate glass
You can always go for a glass bottle. Glass is perfectly inert so it will not react with any liquid you put in it and keeps the taste of it intact.

The stainless steel mugs I use all day long don't taste like metal. I'm also sensitive to it. Don't buy cheap brands. Yeti should be fine. I use West Marine store brand.

If you have one, scrub the inside well with a scouring pad. Rinse and repeat a few times. New stainless mugs need TLC.
I got a Stanley canteen at Ross that has a ceramic coating on the inside, while having the traditional metal outside. I love it so much, no metal/plastic taste.
A glass bottle may be for you. But if you’re only interested in plastic I’ve bought a bunch of Nalgene bottles and have never had an issue with any sort of plastic taste.
