Life Alive! Not everything they have is vegan, but they're all plant-based vegetarian, so it's an easy modification if you order a vegetarian option.

Veggie Galaxy I believe also has a solid selection

Not vegan or vegetarian but I love veggie galaxy, their pancakes are sooo good
