I built a nice 8 1/2 foot built in desk out of 2x8s that I joined together. It turned out really well despite not having a table saw or jointer. My original plan was to paint it white. I primed it with 2 layers of primer to get nice coverage. But now I really wish I had kept it natural or maybe stained. Is there anyway to get it back to the natural wood? Am I SOL and just need to paint it anyway? Any advice would be greatly appreciated.

Should be able to get the paint off with paint stripper/thinner. Probably spare your sanity vs sanding it off which could ruin the grain

This, good quality paint stripper, or just rebuild it. Depends what's faster/easier for you to do, 2x8 are not too expensive depends on your design

Good point. I haven’t considered the ramifications of that. I’m just kicking myself that I primed it before really thinking it through. If you can’t tell I like the building but hate the painting or finishing work.

Stanley Bailey #4, 5 or 6 hand plane. Buy one used, sell it when you're done for the same price. You'll have to learn how to sharpen properly to get good use out of it though.
