When I was a kid we used the under-stairs closet that way. Didn’t need anything fancy, just something to sit on. We had a folding cot type of thing with a foam mattress.

If the kids want a nook, make it an austere, but comfortable environment. Clean, safe from sharp objects, and then let them begin to build their own fort, and you follow suit.
