I was also wondering why we're quoting some celebrity who quotes what "a wise man" said; why not quote that wise man directly?

To be fair, the original source of the "eat the rich" line is a third party account of the President of the Paris Commune, Pierre Gaspard Chaumette, delivering a speech in 1793 in which he said:

>Rousseau, who was also one of the people, said: 'When the people shall have nothing more to eat, they will eat the rich.'

No account of philosopher Jean-Jacques Rousseau saying it exists.
