What advice would you give to someone who is trying to change career to work in the industry, especially within something like sound design where the jobs can feel very niche?

The industry of gaming is wide and growing. As for the jobs like the one you mentioned, it is probably best to ask someone working in that niche. Some universal tips are: courses, practice, internships, finding a good company with a mentoring program, etc.
