Monkey poop coffee would be more correctly called monkey spit coffee. The Rhesus monkey chews on the beans and spits them out. They're never digested.

Conversely, Kopi Luwak is indeed poop coffee, as each bean spends a nice balmy 24 hours in the digestive tract of a cat - the Indonesian palm civet.
