Assuming you have clean floor, helps with smoothing sheet out. You can always turn inside out if worried about germs getting you.
In my house it would likely be dog hair :-)
You can fold on mattress, just harder to flatten out.
I actually fold my fitted sheets like this while standing in my laundry room without laying them on anything - just sort of drape them over my arms while gathering the four corners, Sorry for giving you a hard time.

Just don't waste your valuable time. Just fold them as good as you can and put them in the closet. Nobody will care.
The crumpled ball is fine.
There’s lots of YouTube videos on how to fold a fitted sheet. That’s what got me to finally sort it out!

Lay the fitted sheet flat on floor with scrunchy part up. Fold about 10" from the edge, repeat until you have a long 10 to 12" strip. Dont worry about being totally flat. Now fold this until you have a roughly 12" square.
Repeat with flat sheet.
Then stack with one pillow cover and put into other pillow cover.
This is the martha Stewart method and i consider it the gold standard.
