You don’t have to, but it’s the safest way (peeling away from you).
Knowing my klutzy self I’d end up somehow shanking myself if I opted to peel both ways.

I peel one half all the way around then grab other side. Keeps the peeler 2 inches from knuckles at all times.

Why wouldn’t one peel in one direction? You gather momentum. Now if you stop and change direction, what have you done? You lost momentum.
