Someone doesn't understand the fundamental difference between "organic" and plain old pasteurisation.

Well, this isn't plain old pasteurisation it's UHT pasteurisation. Shorter time, much higher temperature, maybe some other differences? It slightly scalds the more sensitive parts of the milk so some people don't like it. But it does have the advantage of making the milk shelf-stable which can be really great.
