Heck it seems 4 hours ago someone painted their countertops and are happy with the result but want to seal it. So you'll definitely find knowledgeable tips there.

Rustoleum sells an epoxy product but it's pretty expensive and the safety is called into question. Just replace your countertops with formica laminate or try and do an ikea butcher block replacement yourself.

What material are your countertops?

We had cheap countertops in our last place. We primed them, painted them with standard paint, added some paint chips for texture, then poured epoxy on them and let it harden. They turned out really good for a cheap DIY project. We were also prepared though to pay someone to replace them had the epoxy not set right.
