I am a Bob Dylan super fan, but my go-to version of Don’t Think Twice It’s Alright is by John Martyn.
I love In the Morning by David Kitt. The song was originally by the Bee Gees.
I’ve been listening to Green River by Eilen Jewell a lot recently. I prefer it to the Creedence original.
Tainted Love by Soft Cell is a cover. The original was sung by Gloria Jones and is pretty forgettable.
P.S. How can a cover not be of an original song? Are you just trying to exclude versions of folk songs?

I think feeling good by muse is better than the original, although the original is good. But the instruments make Muse’s better

Joe Cocker's "Mad Dogs and Englishmen" album is a ton of great live covers. His live version of "With a Little Help from my Friends" (yeah, it's not on the original album) has to be my favorite though. Shows how good the Beatles were as songwriters, and is a super creative arrangement.
I don't really like Oasis and I don't really like Ryan Adams, buuut... Ryan Adams cover of Wonderwall is a revelation.

Faith No More’s version of War Pigs (especially Live at Brixton Academy) and also their version of Easy.

Alone by Heart. Original was by I-Ten in the early 80s. Very synthy with a male singer. Then actors John Stamos and Jami Gertz made it a duet for a TV show. A few years later Heart covered it and it blew up and is now the go to song for any aspiring female singer who wants to show she can belt. Neither of the first two versions had belting like Ann Wilson does in it.

Another one I listened to today (and it's way old R&B) is Bobby Womack's cover of Wah Wah Watson's "Love Ain't Something (That You Get for Free).
