Before the pitchfork article about him being a total scumbag, I always enjoyed Mark Kozelek's Christmas album. His cover of 2000 Miles by The Pretenders was gorgeous. Love the Sufjan Christmas stuff though.

I have a soft spot for The Jethro Tull Christmas Album. The vocals are a bit aged sounding but the instrumentals are great. Here's a good example.
