You aim at the center, but the point isn't to hit the center. Specially if you're practicing something that's used to hit people. Hit the center and hit the area around it gives the same reward

But the logic is still flawed, aiming at the center is the goal, as the most common goal is to improve accuracy, which is to aim at the center, you improve by getting closer and on it, not the area around it. The reward is also different, in both sports and practicing for combat. As it is to train on hitting more accurately and precisely. For more/less points in sports and for better skill for longer distances or precision aiming in combat.

If you're aiming and arrow to kill, it doesn't matter where the red point is as long as you're able to land a hit

No...you want to hit the center, unless it's certain games of darts where a triple 20 is better or then certain numbers...depending what you have left.
