Cantina La Mexicana in Union Sq Somerville had a plate just like that, but I haven't been there in a dozen years so I don't know their current menu.
Ixtapa Cantina, which has several locations, makes a good enchilada plate too.

Tenoch has an enchilada plato that comes with rice and beans. Really quite delicious!

Maybe Fajitas & Ritas? It's kind of tex-mex-y.

I like El Serape in Quincy? (It’s in that weird part of Quincy though). They have superb molé and their beans are great!
Edit- by “weird part of Quincy” I mean I think it’s called East Weymouth Square but it’s actually Quincy.

Not exactly sure what it is you’re looking for specifically, but I recommend taqueria el Amigo in Waltham for delicious authentic Mexican food. Best in the greater Boston area
