Sam LaGrassa's makes freaking delicious pastrami and has a line out the door for those three hours. They are a legend in this town and deserving of it, anyone on the wrong side of that shop should worry their patrons will rise up and riot demanding blood and a pickle wedge.

In one episode of an Anthony Bourdain show, he pointed out that if there’s a restaurant that sticks around despite not appearing to do enough business to pay rent - it likely means that the restaurant owner owns the commercial space and doesn’t pay rent.

They charge $20 for a sandwich and companies/people are more than willing to pay. That’s how.

There aren’t that many kinds of businesses interested in renting those spaces. There’s no one around outside of business hours and they’re too small to be offices themselves.

Archie’s looks to be open 5:30-2:30 which was the same pre-pandemic. Love that place.

Eliminating the single largest overhead expense has a huge impact on what “viable” means.

You can survive on a lot less when it’s a family business and the building could be paid for, or at least secured via mortgage.

Facts. The CEO of my company is from the New York area and claims Sams is better than any NYC sandwiches place. So he gets catering whenever hes in town. Ends up being hundreds of dollars for like 20 sandwiches.

Let’s not lump Sam’s and Archie’s together from a price perspective. Archie’s sandwiches are still $10-$12.

I used to work for a company that did sam's catering every month for our department (other departments might have had it too). The last recent time I got it was also through work. The sandwiches are much smaller than I remember them being.

Owning multi-million dollar property that you bought decades ago for next-to-nothing allows you to do a lot of things.

And selling $30 sandwiches to a corporate crowd for 3 hours a day (because that’s the only goddamn time folks eat lunch) is one of them.
