Does switch Skyrim have mods? If not, Xbox Skyrim with mods will open up sooooo much. Plus there's the previous TES games like Oblivion and Morrowind playable through backcompat (oblivion is great, morrowind is very different so may not be enjoyed as much).
Depending on why you liked Skyrim you'll also have other Bethesda games (fallout mainly ATM), Outer Worlds, maybe Kingdoms of Amalur.
Dragon age combat is very different so if that and open world are all you want maybe not the series for you (personally love them but not analogous to Skyrim in those ways).
The Mordor games are great, very different combat/gameplay but fantastic games.
Overall I'd say you'll likely find things you enjoy, and gamepass makes it very easy and cheap to do so.

No mods on switch! Oblivion looks pretty badass I'll check that out too. As for the other games you recommended Ive never heard of any of them so thanks for introducing me to some new stuff - really appreciate the recommendations !! And wowww what the gamepass idea is so cool - actually didnt know that existed so thanks for tuning me into that too!

Bethesda made Skyrim and the series, they have another series called fallout which is basically the same mechanics but post apocalyptic instead of fantasy. Some great games, and number 4 has mods on Xbox.
Outer worlds is basically fallout by another company (the studio actually made one of the fallout games, new Vegas, which is by many considered the best).
Oblivion is more standard RPG than Skyrim and can be more complex, but it's a fantastic game.
Gamepass is incredible, of you get gamepass ultimate you also have gold (play online, 2 free games a month) and EA access for EA games. Best part is they own Bethesda so fallout and elder scrolls (Skyrim) games are all available with gamepass for no extra charge. Their new upcoming space game will be available day 1 as well.
