I was in the radahn festival while recording the frame rate, that is probably the most things on screen at once, and I was actively fighting, I played through my first playthrough entirely on 4K 60fps with no issues

You cannot have been because the game simply doesn't do that on a Series X. It would have been dynamically changing the resolution to maintain that framerate.

Cool, well I was playing true 4K 60fps, making sure nothing dipped, and it didn’t.
Edit: I did not mod my xbox or change it in any way

You go into settings, and you set a resolution, Xbox generally sacrifices frame rate before resolution, and even on quality mode, Xbox likes to keep resolution the same, and if it does change, like in the middle of an intense battle, I check the settings every couple of minutes, staying at 4K

The resolution you've selected in the Xbox setting does not mean the games you are playing are output in that resolution. According to Digital Foundry's tests, performance mode on Elden Ring can result in resolution being scaled down to as low as 2688x1512 and frame rates can vary between 45 and 60 FPS.

Digital Foundry have been involved in a lot of controversy, and not whenever I check anywhere about digital foundry, it’s telling me they are biased, I used to believe in digital foundry, but I don’t anymore, if you have a different source other than digital foundry that shows the same results I’ll believe you, but I don’t trust something so deep in controversy

You can just Google is "Does Elden Ring run at 4k in performance mode" to get your answer. Plenty of sources will tell you the same thing. And since your method of measurement is your xbox settings I'm inclined to say you don't actually know what you're talking about here.
The Series X is impressive kit, but it is not going to run high fidelity 3d games at 4k 60fps and no one sensible would claim it does.
