Modern jetliners use what is called "fly-by-wire". There's no direct mechanical connection between the flight controls in the cockpit and the control surfaces on the wings and tail. When the pilot makes a control input, computers interpret that input according to the control law that is currently in effect and then move the control surfaces appropriately.

Only Airbus and the 777 have FBW AFAIK which make FBW airplanes a minority in civil aviation.

Boeing and Airbus have about an equivalent number of aircraft in service, and both the 777 and 787 utilize FBW, as well as Embraer. So, the majority of commercial aircraft in service are FBW.

You are right. Totally forgot about the 787 and though that Emb only start deploying FBW on their E2 series.
