I can understand why eating salty things makes us thirsty. But why do we get thirsty right after we eat things with high sugar content? Why does our body need water that quickly? What does that water do compensate for the sugar intake?

Thirstiness after consuming sugar is a symptom of diabetes. It also results in plenty of urinating. Your body is essentially trying to flush the excess sugar out of your system. Consider having your blood sugar tested.
