A scheufele (bavarian dialect for shovel) is the whole shoulder bone of an pig that is baked whole. It's called like this because the bone looks like a shovel. The brown sauce is basically german gravy and the balls are Knödel (basicially translated as balls) made from potatoes. They are basicially mashed potatoes with additional potato flour and, salt, that got cooked again.
