That cake looks quite moist, maybe a little too much so. Kinda undercooked.

That being said, I kinda like stuff undercooked.

Oh for sure, carrot is my fave with yellow raisins and walnuts, cream cheese icing omg.

But this pic looks like... Dense wet "gooey cake" if you're familiar. Like southern home cooking gooey cake or a brownie texture.

That's all I'm saying. It's got a weird texture and no bits of carrot or nuts or anything. Kinda weird. But I'd still try it.

ETA, maybe I saw some carrot bits on second look.

Probably used carrot purée rather than finely shredded carrots. I've seen this exact texture from someone using the purée. Yellow raisins got no business inside a carrot cake.
