Yes, it is magical, but use very little. I love mayo on most stuff, but for this application just spread some on and scrape most of it off. Maybe add a sprinkle of grated parmesan and you have a tasty, crunchy sammich.

well, i got a 3 day ban from the grilled cheese sub for posting a salami grilled cheese w/ chicago style giardiniera. a mod commented "you have 20min to tell me why this is a grilled cheese and not a melt" and i responded "your mom's a grilled cheese" and the post was removed. so, your correction is wrong.

the other side is was the same. i typically start with a cold pan but i let it go too long cuz i was distracted. when i did the flip the pan was wicked hot and just char fucked it on that side too. not the first time and won't be the last.

I approved this and I have to say, I know who that is and man that's exactly the sort of thing they would do.

Feel free to post this stuff here and maybe try low and slow, it helps stave off the char. Also warming the meats prior helps as well.

yeah, sometimes i'll fry the meat first, especially with salami, and then proceed as normal.

my usually technique is to start with a cold pan and cover. when the pan side is done everything else is warmed through and then i add the top bread and flip til that's done. usually works out but this time...was this time.

still tasty though.

So, I am a firm believer that american cheese MUST be in a grilled cheese sandwich. If you typically use other cheeses, absolutely still do so, but the next time you make a grilled cheese with cheddar try two slices of cheddar with ONE slice of american in between them. It melts beautifully and adds a creamier texture that cheddar simply cannot give. It will add something special in the middle. I seriously can't recommend this strongly enough, it could change your life >.>
