I was going to say, how they managed to cook those bacon wrapped scallops so beautifully, yet completely fumbled the ball with the steak is beyond me lol

yeah gotta get that temp higher for the steak. Scallops might be overdone.

cookinwithclint t1_j9qecle wrote

If he par cooked the bacon they are perfect, if he didn't those scallops will be terrible

AfricanHolocaust t1_j9npsen wrote

So you put it in a takeout container and garnished it with a lemon wedge? Seems like this was ordered in and not homemade

The steak’s lack of searing is even more appalling if it came from a restaurant!

georgekosmadakis t1_j9pvaqc wrote

guys the restaurant might just be a dude in his home selling boiled steaks, thats still homemade right??

The_Lions_eye t1_j9ro0zz wrote

Hahaha...that microwaved steak has "Boston Pizza" written all over it!

Mmm, wasting 70 bucks on sweaty delivery steak and pretending you cooked it.

The takeout container and what looks to be the desk in a hotel room make me doubt the homemade tag

plhought t1_j9pj2tz wrote

Lol yeap. This is likely a room-service steak. Definitely not homemade.

missing the most important tool, a hot pan to actually seat that steak and not steam it

Somebody forgot to fry a steak and/or doesn't know how sous vide works.

Maillard: it's important.

I don’t know if this is an unpopular opinion but wrapping scallops in bacon ruins both the scallops and the bacon. Why eat a scallop if you’re going to coat the flavor in burnt pork and fat?

9

shakycrae t1_j9prcsk wrote

Surely to get the bacon that crispy you have to overcook the scallops

5

SLawrence434 t1_j9py1s1 wrote

I’m sure any restaurant with any self respect would never serve those other than maybe an Outback Steakhouse

boutiquekym t1_j9oe2ug wrote

Bacon has more sear than the steak other than that it would be fantastic x

crank the heat up when searing steak next time, so it doesnt look gray

Or better yet, tell the restaurant you order from to sear it lol. No way in hell OP cooked this and then decided to put it in a takeout container and garnish it with a lemon wedge.

Come on, man, if you're gonna lie about cooking the food yourself, at least put it on a plate and don't leave it in the takeout container. Also, if I cooked that steak myself, I sure as hell wouldn't post it on the internet and would hide any evidence that I fucked a steak up this bad.

The bacon wrapped scallops steal the show! Two points of criticism, hopefully constructive!

  1. dry brine the steak with a decent salt coating 12-48 hours in the fridge before cooking. I can almost guaranteed a crispy exterior, if pan frying.

  2. Asparagus that large is mediocre. Aim for nothing larger than a #2 pencil, don’t be afraid to cut the hard ends off, Blanch them for a minute or two in boiling water, then into the frying pan where your steak was cooked for a quick sear. (Do this while your steak rests) Flavor them how you want, I love hollandaise or parmesan Robusto with a little salt and pepper.

You can 100% get a nice crust while leaving the inside rare, raw even.

10

Mooch_Attack t1_j9nl144 wrote

You can cook a rare / blue steak and still get a nice crust on it is the thing.

3

v3sk t1_j9nwc92 wrote

Rareness has little to do with what it looks like on the outside.

kasplatter t1_j9npvi5 wrote

Real scallops should be eaten on their own or in shell with the "foot", because they have a "delicate" flavor. If they are wrapped in bacon, my guess is that they are actually Surimi ("fish goo") or Skate.
