Kimchi is a general term in the way the word pickle is. A pickle can be cucumbers but also peppers, cabbage, onions, etc. In the same way, kimchi can be all of those things and also radish, green onion, and any veg really. There are even white kimchi. There are over a thousand type of kimchi!

I love kimchi grilled cheese ( even with ham ) sandwiches!! Use a couple types of cheese as well.

Been researching this myself - love kimchi! I hear homemade is the best. Want to try homemade vinegars, pickles, pickled eggs, pickled veggies and fruit-wines, too!

Not a terribly expensive hobby to start, and it is good for you! Saves money, long-term as well.
