Yes. Unless they mean to dip bread, which is redundant because there's already bread in it floating under that cheese.

Having made both, that soup will absolutely wash off anything you've put on the steak. Yes you CAN dip steak into the soup, but imo it's an affront to the steak and whatever seasonings were on it. It's not like a chowder that's thick and will easily stick, either, it's stock. Mmm, let me have some muted stock on my now bland steak because it washed off into my soup. No it won't wash off everything but it will take off more than I'd ever be willing to compromise on. Whatever I put on a steak stays on the steak.

Sourdough is harder than normal garlic bread, it's going to soak up the drippings from the filet and basically be a flavor aftershock. Doesn't seem weird to me at all and definitely wouldn't work with a softer type of bread.

Mandatory sourdough is a type of fermentation not a style of bread. You can make any bread as sourdough, I’ve made fluffy super soft Japanese milk bread with sourdough, pretzels, bagels, pizza, sandwich bread, and of course a crusty boule like the type you’re referring to.

Technically a reverse sear is done from raw into a low temp oven, then seared hot.

Sous vide then sear is basically the same, but the first part is done in a sealed bag in a water bath.

Last French onion soup I ordered was from a nice steakhouse and the cheese came out white as snow. THAT is how you treat your cheese on a good French onion.

A slice of bread and a bunch of gruyere on top, then grilled/broiled (terminology depending on where you hail from), but the majority of the bowl is the soup
