Normally, at a Chinese restaurant, they'd serve this in a whole pineapple shell. I have no such shell.

I never order pineapple fried rice at a restaurant for just that reason. They typically rinse and reuse the pineapple shells at restaurants when you order pineapple fried rice.

I usually see it at Thai restaurants, and it has cashews, raisins, tomatoes, and onions. I’ve also never seen it served in a pineapple. One of my favorites.

It's pretty good. A standard Chinese restaurant should be able to make a proper one for you.
