Made using lightly toasted bread layered with Colman’s mustard, a beaten egg mixed with grated cheese, salt and pepper. Baked for 15 minutes on a medium heat and topped with freshly chopped leek.

We grew up calling it washed rabbit. I remember telling someone “oh I love rabbit!” and then being fed some weird pungent meat.
I think I thought that cheese on toast was rabbit.

Maybe leeks and scallions are used interchangeably in Wales. Those look like scallions to me.
