Can you describe the taste etc of the crocodile? I ate it about 20 years ago in South Africa and I kind of remember the taste being okay but not particularly nice and it was not that tender. It has been so long I kind of forget but it wouldn’t be a go to because of that experience.

Had a very chicken-like texture. The smoke flavor didn’t penetrate the meat as well as I would’ve liked, but I think the bacon wrap may have contributed to that. Tenderness was definitely not an issue on this gator.
