As a resident of the UK, what is the difference between a cheese melt and grilled cheese? One makes perfect sense in my mind, the other does not.

According to one sub and one sub only (that shall not be named), a melt is a grilled cheese with anything inside it.
But outside that hellhole and IRL you can put anything you want into a grilled cheese, and still call it one. Just specify what's in it with the name, for example bacon grilled cheese, or grilled cheese with bacon.
