For what it's worth, I'm Coloradoan and would tear this plate apart like a wild animal.

I've seen poutine recipes that sprinkle chopped green onions on top. And tots tend to soak up gravy better

It's not takeout, it's homemade. I was hungry when I went shopping, and saw cheese curds. I bought them, and had the tots & gravy at home. Made it for lunch
