Looks good to me. I get bored of seeing all the try hard beef wells. Not to discount your effort but this looks like something a person makes because they want to eat it.

I wouldnโ€™t say difficult, takes a bit of time. And I know itโ€™s not what is typical of beef Wellington itโ€™s supposed to be done in one tenderloin, but I cut it up into two to make individual ones because I find wrapping those easier, all the same ingredients though.

I know it's not the right shape, but your pastry is actually done so it's better than 90% of the fancy looking ones that get posted on Reddit. Bet it was incredible.

From the fridge, I didnโ€™t want to bring it to room temp in case the puff pastry got soggy, not sure if it would or not

You can defo bring the meat out for an hour or more before the oven, helps with that ultra pink center.

Don't know why your being down voted, this isn't a wellington. Wellington is made with the long strip of tenderloin, this looks like a sirloin?

You need a big slab to make it a wellington, slices are intended to served face up with the shrooms/ham/pastry containing the juices. That's like saying you can make chicken Kiev with half a breast. Enjoy your cooking and be happy, but it's not a wellington
