I did not, but when I make them again, I'll par-cook the bacon. It could have been a little crisper.

400°f for 20 minutes uncovered. Cover with foil for 30 minutes. Sprinkle freshly grated Parmesan and thyme. Cook for another 10 minutes.

I think I might mandolin and boil the potatoes, parcook the bacon in the oven (10-15 minutes at 400 until fat is rendered), dry the cooked potatoes, coat the potatoes in bacon grease, apply herbs and parm to potato slices, pair up and roll bacon and potato slices, oven at 400 for 10-20 mins until crispy (or in a smoker at a lower temp for longer?)
