Ingredients  

  • 2 1/2 cups sweet corn (boiled)
  • 1/2 cup coconut milk/cream
  • 2 cups glutinous rice flour (needs to be glutinous, not regular rice flour)
  • 2 eggs
  • 3/4 cup sugar
  • 1/4 cup melted butter
  • 1 tsp vanilla essence
  • 1/2 tsp salt
  • 1 tsp baking powder  

Blend the corn and coconut cream until smooth. Then add the melted butter, sugar, eggs and vanilla essence and blend again. Add in the dry ingredients and combine everything very well. Pour the mixture into a baking tray (mine was 10”x10”) and bake at 350 °F for about 60 minutes or until the top becomes light brown in color. Allow it to cool down before cutting it.   You’ll love this if you’re a fan of mochi!

It's essentially mochi butter cake with corn in it! I made mochi butter cake for a party recently, and I was contemplating doing this exact thing!

I thought it was too risky for a work event, but I'm glad it turned out amazing.
