Are you saying the people making food at bodegas and food trucks aren’t pro chefs? They literally cook for a living…..

Most food truck cooks I know report their business as a clothing retailor to keep their amateur status for the Olympics.

It actually doesn’t though. You need to be certified and trained as a chef to have that designation.

Next you’ll say the line cook at Denny’s is a chef.

Spoiler alert: he’s not.

Awesome video and they seem like great guys. I didn't know that chopped cheese was such a new thing, with how much cred it gets as a classic NYC sandwich I would have figured there was a longer history to it.

Take a hamburger patty. Cook that bitch. Chop it up nice and good. Put cheese on it. Then add whatever the fuck else you want on it. Put that shit on a bun. Boom. Chopped cheese. Delicious. It's somewhat comparable to a Philly cheesesteak but don't ever tell that to anyone from Philly or New York. You will get stabbed.

1

Anerky t1_j271g2e wrote

It’s easier to make at home than the OG cheesesteak. You can use hamburger Patties and chop them up or just use plain ground beef, melt American cheese into it with a diced onion, too with lettuce tomato ketchup Mayo on a sub roll.

2

TakeItToTheMax t1_j275abt wrote

I have 3 lbs of frozen raw ground beef leftover from Christmas Eve. Maybe I’ll make homemade chopped cheeses soon!

1

Anerky t1_j27617n wrote

Use shredded iceberg lettuce, the shittiest kind you can buy at the grocery store and make sure to really fold the cheese into the meat

2

Mariahmine t1_j277uaw wrote

TakeItToTheMax t1_j277xeq wrote

Haha I more than likely will not buy iceberg cause we won’t use it, but when I want that vibe for sandwiches/burgers I use the bottom part of Romaine hearts that are kinda pale yellow. Not the same but gets the job done

−13

SCPH-1000 t1_j264d0h wrote

There’s for sure a similarity in taste but I’d argue it’s kinda a cross between a cheeseburger and a Philly cheesesteak. The chop and cheese being mixed into the chopped meat changes the texture and how it tastes to my mind.

Also gotta remember this is something you get for dirt cheap and is there for you on a drunken walk home after the bars or a quick bite before catching a bus. It’s the cost and availability that makes it famous here.

iced1777 t1_j26g1qj wrote

It's not supposed to be a fancy sandwich served to impress tourists. It's an affordable every-man's sandwich that hits the spot after a long day at work or a long night out. Basically it's just good street food.

You say that like it’s a bad thing? But the hoagie roll is different than a burger bun. Easier to wrap and eat on the go too. Chopped cheeses are amazing.

Chopped Cheese =/= Cheesesteak

Cheesesteak is made with thin sliced beef, ideally ribeye. A Chopped Cheese is a burger patty that’s chopped up on a flat top and put in a roll by the guy at the bodega at 2am after you been walking home from a night out
