I didn't know there was mayonnaise on it! That sounds delicious! I'll have to try that next time. When I had it in Peru I think it was just the dogs and fries but maybe I'm forgetting.

Why no aji?

I didn't know there was a topping! I had to look that up and it looks delicious. I'll have to add that next time. When I had it in Peru it was just plain but maybe I'm misremembering.

Next time, get aji Amarillo or for me the NY style green sauce. It's a game changer and makes this dish awesome.

That sounds so good. I'm definitely going to pick that up on my grocery run tomorrow. I just made it again and made a sauce with mayo and that asian garlic chili paste I had on hand and that was really good. I can't wait to try it with the real aji amarillo sauce. If you don't mind looking real quick, what do you think of this recipe? https://www.eatperu.com/aji-amarillo-sauce-recipe/ Pretty authentic?

Authentication on sauces is always a battle, but the concept of aji among Peruvians is outside my pay grade. I've admitted a preference for one style which is inauthentic, but great. Try a aji amarillo and a NY green sauce and choose your own adventure, one may be of your choosing.

Just needs a good bit of tomato sauce and some salt and it would be ready to go!

Oh plenty of salt on here! And I had a side of ketchup but tomato sauce sounds interesting as well
