Just needs a good bit of tomato sauce and some salt and it would be ready to go!

I eat this all the time, sausage and homemade fry’s and some beer at 2am is awesome.

That sounds so good. I'm definitely going to pick that up on my grocery run tomorrow. I just made it again and made a sauce with mayo and that asian garlic chili paste I had on hand and that was really good. I can't wait to try it with the real aji amarillo sauce. If you don't mind looking real quick, what do you think of this recipe? https://www.eatperu.com/aji-amarillo-sauce-recipe/ Pretty authentic?

Authentication on sauces is always a battle, but the concept of aji among Peruvians is outside my pay grade. I've admitted a preference for one style which is inauthentic, but great. Try a aji amarillo and a NY green sauce and choose your own adventure, one may be of your choosing.
