As a fan of skip-bo, monopoly, and divorce, I suggest you look into seven wonders.

Board game, there is a playstyle where you can do 1v1. My wife and I played the ever loving shit out of it during quarantine, so much so that we started making custom rules. Super fun game for 1v1.

There's also 7 Wonders Duel that is made specifically for 2 players. Also very fun.

7 wonders is great if you're 4-5 people, but if you plan on playing as two duels is 100% a better game.

I'll have to try duels. We had lots of fun with the base game 1v1 and manipulating the 3rd "npc" player
