Maybe turn based stuff like Slay the Spire or Final Fantasy. Or Until Dawn which is mostly point and click with a few timed events, it's a teen horror game of survival. 2018 God of War is very easy on easy mode with a fantastic story. Abzu or Journey are essentially plotless explore games and both are beautiful.

My wife isn't a gamer, but we have played all the way through Pit People together. It's turn-based so nothing too fast, as well as co-op. It's got a fun story, art style, and music.

Try something more like an interactive movie at first I would recommend "What remains of Edith Finch", "Takoma", "gone home". You can also try a game made for two like "It takes two" or "unravel 2".

Try "it takes two". You play it together and can help her. Maybe she gets interested in other games then and seeks them out on her own.

I would start with a good story game like What Remains of Edith Finch, Fire Watch or To The Moon.

Unpacking is good, but my partner found it dull (I liked it).

If she wants a bit more action, something like Uncharted or Guardians of the Galaxy would be good, still with a decent story.

My wife and I long distance dated for a few years before moving in together and I convinced her to play Stardew valley multiplayer with me as a way to spend some time together. We put hundreds of hours into it and she even started to play it on her own without me. 5 years later and it's still the only game she plays.

Portal 1 is always my go-to answer. The writing is hilarious which non gamers will appreciate, it's mostly a puzzle game that relies on problem solving instead of quick reflexes so people that can't control their character well aren't at a huge disadvantage, it's heavily railroaded so she won't ever feel lost, and it's just an amazing game.

It Takes Two. Couch play, split screen co-op. It's a super fun platformer that introduces basic game mechanics. I've been playing it with my wife who is not a gamer and she loves it.
