TACTICAL

  • King Arthur: Knight's Tale - Do not let this generic name fool you, this's some of the most fun I've had with a fantasy tactics game. This's a dark timeline version of Arthurian Legend where you play as Mordrid, and work to stop a corrupted Arthur.

  • XCOM 2 - If you've dipped your toes into this genre, you probably already know about it. This's probably the most solid Tactical Turn-Based game you'll ever play. Aliens have succeeded in taking over the world, you have to operate from the shadows to free humanity from their grasp. Simple premise, mechanically rich. Just be aware that no shot is safe, even at 95%.

  • Wasteland 3 - A Tactical RPG by InXile (Legacy Fallout devs), some similarities to DOS2. This game rides a fine line between bleak/depressing to down right crude/silly. Your team can be a max of 6, and recruit customization for this game has plenty of crunchy stats to build into: attributes, skills, quirks, perks, backgrounds, etc... Of course if you're not feeling creative, there's presets and randomizers galore. This one also has 2 player co-op with dialogue that only happens in multiplayer!

  • Mutant: Year Zero - This's a shorter tactics game with emphasis on stealth ambushing and building the post-apoc mythos around the interesting Mutants you control. As I said this one's pretty lightweight, but if you don't have the time commitment that the above games demand at the moment, this one's a great fix.

ACTION

  • Kingdoms of Amalur: Re-Reckoning - This's the remaster of a fantastic and stylistic Action RPG that unfortunately released in the shadow of Skyrim. This was picked up by THQ nordic, remastered, and even got a new DLC called Fatesworn which is a nice bow on top of an already fun game. While some of the dialogue can drone on, the action is solid and addicting, and the character building is straightforward and has 'class' bonuses for any build combo you can think of.

  • V Rising - Vampire survival game that's still in early access, with very much that ARPG perspective and style of play with a fun twist in the blood system. You don't pick a class, instead the types of blood you drink determine what bonuses you gain. Rogue blood for example, ups your crit chance, while Worker blood makes gathering yield more. If you don't like base building though, that is a portion of the game so keep that in mind.

  • Trials of Mana (Remake) - This's the Seiken Densetsu 3 3D remake and it's just simple Action RPG Fun, with 6 main characters. You choose 3 of them in any combo, that then decides whos story you follow and which villain you get. Each character of course has their own archetype, but also a class tree that lets you customize their strengths/weaknesses and special moves.

I definitely have more floating around in my brain, but these were the ones that stood out based on your criteria. I hope you find plenty of fun experiences to add to your gaming library!

Good list! As for V rising, I had it in mind but I didn't take the shot because it's still in EA, I try to wait for a 1.0 release as much as possible.

That's definitely fair, and I don't usually recommend Early Access games unless they're decently polished from the getgo, which V Rising is. I wouldn't put it on par with Valheim but it's pretty dang close.
