Depends on what your GPU is and what games you play.

Depends on your graphics card. 1440 > 1080.

What will be driving the monitor? Console, PC, what GPU etc.?

What's the budget and cost of those monitors?

Without any other details I am taking the 32" 1440p monitor - just more to see. But it might not be the right one.

1080p at 27" is too low resolution now for me. 24" 1080 is fine.

However, I would certainly look them up on rtings.com before buying.

Dell - 32" LED Curved QHD FreeSync Gaming Monitor (165Hz) 2560 x 1440 because I like big monitors.

By the details you listed only the first is a logical choice. 4K monitors for PC gaming are a joke, 2K should be 27 inch and 1080p needs 24 inches. If you only game and consume media on it you can go curved otherwise for productivity it is counter productive and you might hate it either way. If you are searching for a monitor for a console turn around and look at TVs instead.

The sweet spot in general would be a non curved, non OLED (because burn in) 27 inch 2K monitor which is G- or Freesync compatible and has a refresh rate of 120 to 180 Hertz. Just make sure to choose a panel you like, usually IPS is the least problematic, fast and good looking.
