They love the solitaire collection, especially freeCell but the other day they try Pac-man and they love it!, also 2048, who wants to be a millonaire, and other with blocks that they play on Android.

Any recommendations?

Alien Isolation VR should finish them off quite quickly

Inscryption! Its a strategy card game with some really unique elements in it. Once you beat the campaign you can just replay the 1st part (which is the best) there's no multi-player and is just a really relaxing game.

Edit: Just a FYI, It's not on xbox which is sad because I'm on xbox.

Turn based games with no time limit are probably what you want to look for. Inscryption or Slay the Spire would be my go-to games. If they prefer actiony stuff maybe x-com.

I'd say Outerwilds if they are capable of using a keyboard or controller well, the story could benefit them in their old age and the puzzles and game mechanics would challenge the cognitive and memory aspects of their brain to an extent

Either that or you could be the person controlling the character while they watch and discuss with you what to do next if they can't get around the controls. In this way it could be a great journey for you both
