Wii u online works still but its not as cheap or easy to find as you might think. Hdmi adapter is fine for most playing wii but sd on an HD display is less than desirable for an enthusiast. My suggestion would be to enable dev mode and use emulation to get your fix. Can all be done in less than an hour

No that won't be possible via cemu. If you want that full experience get a switch because a used wii u can run you 150 usd easy but you can mod it to play everything and online would work
