is there a game that‘s basically PvP Dungeons and Dragons? Like, turn-based, everyone controls only one character etc.

You can pvp in dnd. The combat is evolved enough your only issue is sharing a DM you may catch on to your opponents strategy, but that's always going to be the case

There are gladiator rules in one of the versions. I don't know if they have them now, but it's easy.

Maybe Divinity Original Sin 2? PvP isn't the basis of the game, but I think there's an arena that allows pvp ofsome sort. It also has a gamemaster mode although I don't know if it can facilitate pvp...
