Neutral to bright neutral ones could be suitable for your needs. Even just Truthear Hola could be a good start.

I haven't really thought of going the IEM route. Do you have a recommendation that would fit that "open back" sound?

None would really convey an open back feel, I tried finding that myself and couldn't.

Open and semi-open would also let all of the noise in.

Maybe the Raptgo Hook-X? Haven't personally heard them but they are apparently open back planars.

Make me wonder if they are real open backs or just like the Final Audio E-Series where it doesn't give a real open feel either way.

The Raptgo x HBB Hook-X is what you're looking for and they're good for gaming and sound very good for music.
