I have 6 year old Astro A40's which sound pretty decent to me, probably because they're the only headphone I've ever owned. Although I do notice that there is a very narrow soundstage and the song seems really cramped together if that makes sense. Recently been really getting into my music so I wondered if i would really hear a difference from some proper sennheisers or something of the like.

Only really into rock and its various offshoots if that helps

I think its different for everyone. Which is why I think if you're dabbling in premium sound for the first time, start smaller. Grab a pair of 58x's or 6xx's to start and see what you notice. Don't go and buy a pair of thousand dollar cans until you've gotten your feet wet.

A pair of 58X or a pair of Beyers will probably awake some feelings for you, both are quite the opposite of each other.

But yeah I agree, start cheap, don't go head first into it.

Yeah I certainly am not going to spend thousands just to listen to In Rainbows over and over again.

100-200 pound seems about right for a first bash at it.

The 58x's are the easier of the two to drive. An amp will help bring out the sound more, but optional with the 58x.

If you go the 6xx route, you'll need an amp for sure.

Should also mention that even if you expand your headphone collection later on, I think both the 58x or 6xx are a pair that everyone comes back to. They are the starting point for a lot of people, including myself.

I'm not gonna give any real recommendations for products, but I will recommend buying used stuff where possible. You can save upwards of 50 percent depending on the thing you're buying.

Seconded. Don't be afraid of used stuff. Check the descriptions, the photos (there'd better be photos), use PayPal/an insured payment method/service, and you're good to go.

I learned by mistake that you shouldn’t just grab a multi-thousand $ headphone to “see what that is about”, as it ruined me for years. 12 years later I bought my first high-end headphone, when I could finally afford it. Start small and see what you like within your budget.
