I tend not to use it, but I have had good experiences with it. For virtual surround, it's highly dependent on the virtualization algorithm, so there are good and bad implementations. The best I've heard thus far is Waves NX. I combined Waves NX with a Stax Lambda-series headphone (which already has an interesting "frontal" soundstage) to play an orchestral piece and it was possibly one of the best "out-of-head" sound experiences I've had. The Waves NX Windows desktop app has been discontinued though.

No, it just sounds like some weird EQ preset.
Apple’s head tracking implementation adds more value, at least theoretically, but I’m still not fond of what it does to the sound quality.

I’ve heard the APM spatial audio which is neat. But unfortunately the sound quality there just doesn’t do it. I’ve heard of an amazing product called the Realiser A16. It apparently renders 16 channel audio virtually with a HRTF and RRTF added. I really want to to try this but here is the demo video I saw that gives you a taste

You are not alone. A good virtualization is crucial.

Don’t care much for virtual surround for music myself if I was watching movies or gaming on headphones maybe but not much for music.

I don’t mind it with my AirPods Pro but it’s also highly dependent on the mixing of the track. There’s a very inconsistent quality of stuff even when they have been supposedly mixed in Dolby Atmos.

Fine on my commute but when I’m at home or sitting around somewhere it’s just stereo mixes thanks

Stereo for stereo headphones is the best. If I make an actual Atmos setup then I’d use it.
