why would one ever want to eq such expensive cans? i want them to sound great out of the box

Why not? The HD800s have really damn good soundstage and I don't know any other headphone that comes close at its price point. But the sound signature isn't quite my cuppa tea. So why not fix it literally for free? If I want a perfect headphone I'd have to buy the HE-1. But I don't have that kinda money, so I tune what I DO have to more suit my liking.

Maybe i should eq my sundaras? I am quite satysfied with the sound but maybe i can get more? But i need an app with an easy UI

On Android you can use Wavelet. It's incredibly easy to use. On Windows you can use Equalizer APO with the Peace GUI. It's not as easy to use as Wavelet but there are plenty of videos on YouTube on how to use it. But once it's set up, you don't really have to touch it anymore. For EQ profiles, I'd go with one from u/oratory1990 (which you can find on r/oratory1990) and edit that to your liking (if necessary).

Try Roon so that you can EQ with WASAPI and therefore no interference/distortion from your PC. I also had this problem before discovering Roon!
